The Food Matters Project: Beet Chips with Goat Cheese and Mint

I love snacks! Appetizers also count and now I see beet chips being eaten as both a lot in the foreseeable future. This week’s Food Matters Project recipe for Beet “Sandwiches” was chosen by Meg over at My Wholefood Romance (love the name). Beet Chips with Goat Cheese

I went super simple with my version, leaving the beets open-faced with just a little goat cheese smeared on top with some freshly torn mint and cracked pepper. These were some pretty irresistible little bites.
